Sucuk Burger

Now, in Holland, we call pancakes ‘pannenkoeken’, and while tasty, we (that means you and me, buddy) are gonna level up the pancake game way beyond that. Why? Well, I like my pancakes like i like my women – thick and preferably stacked. And with that said, Dutch pancakes just don't hit that sweet spot. So i'm taking a page outta the States for this one; thanks America.

Ingredients:

  • 1 brioche bun

  • 150g ground beef (rolled in 75g balls)

  • 1 slice of pepperjack cheese

  • 100g sucuk, diced

  • Half of a white onion, finely chopped

  • 25g brown sugar

  • 1 tablespoons apple cider vinegar

  • 50ml water

  • Peanut oil, for cooking

  • 1 tablespoon of Chipotle Mayo

Instructions:

  1. Heat a skillet over medium heat with some peanut oil. Add diced sucuk and cook until crispy, 5-7 minutes. Add the onion and cook until softened, about 5 minutes. Stir in brown sugar and apple cider vinegar; cook until caramelized, about 2-3 minutes. Add water, reduce heat, and simmer until thickened. Set aside.

  2. Wipe out the skillet and keep it over medium heat. Slather the inside of each brioche bun with mayo and toast cut-side down until golden brown. Set aside.

  3. Turn up the heat to high. Place a ball of beef in the skillet. Press down firmly with a spatula (or burger press) using parchment paper to flatten. Season with salt and pepper, then flip and cook through. Repeat with the second beef ball. Place a slice of pepperjack cheese between the patties for some spicy gooeyness.

  4. Take the bottom half of the bun and place your cheeseburgers. Add a spoonful of the sucuk jam. Take the top half of the bun and slather it with a spoonful of chipotle mayo. Combine it and you got yourself a fire burger.
